Ingredients:  

Main Ingredients

  • 2 cups Pumpkin puree
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Ground nutmeg

Instructions: 

  • 1. In a large pot, sauté the chopped onion and minced garlic until soft.
  • 2. Add the pumpkin puree, chicken broth, salt, pepper, and nutmeg. Stir well.
  • 3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 4. Use a blender to puree the soup until smooth.
  • 5. Return the soup to the pot, stir in the heavy cream, and heat through.
  • 6. Serve hot, garnished with a sprinkle of nutmeg if desired.

Notes:

For a vegan version, substitute chicken broth with vegetable broth and heavy cream with coconut milk.
