Ingredients:  

Main Ingredients

  • 1 tbsp Olive oil
  • 1 large Onion, diced
  • 2 cloves Garlic, minced
  • 1 medium Bell pepper, diced
  • 1 can Diced tomatoes 14.5 oz can
  • 1 can Kidney beans, drained and rinsed 15 oz can
  • 1 can Black beans, drained and rinsed 15 oz can
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 cup Vegetable broth
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook until softened, about 5 minutes.
  • Add minced garlic and diced bell pepper, cook for another 3 minutes.
  • Stir in diced tomatoes, kidney beans, black beans, chili powder, cumin, and paprika.
  • Pour in vegetable broth and bring to a simmer.
  • Reduce heat to low and let simmer for 30 minutes, stirring occasionally.
  • Season with salt and pepper to taste before serving.

Notes:

Feel free to add more vegetables or spices to suit your taste.
