Ingredients:  

Main Ingredients

  • 4 tbsp Butter
  • 1 cup Chopped Onion
  • 1/4 cup All-purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Milk
  • 1 cup Beer
  • 2 cups Shredded Cheddar Cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions: 

  • 1. In a large pot, melt butter over medium heat.
  • 2. Add chopped onion and cook until softened.
  • 3. Stir in flour and cook for 1-2 minutes.
  • 4. Gradually whisk in chicken broth, milk, and beer.
  • 5. Bring to a simmer and cook until thickened, about 10 minutes.
  • 6. Remove from heat and stir in shredded cheddar cheese until melted.
  • 7. Season with salt and black pepper to taste.
  • 8. Serve hot with crusty bread.

Notes:

For a smoother soup, blend the mixture before adding cheese.
