Instructions:
1. In a large pot, melt butter over medium heat.
2. Add chopped onion and cook until softened.

4. Gradually whisk in chicken broth, milk, and beer.
5. Bring to a simmer and cook until thickened, about 10 minutes.
6. Remove from heat and stir in shredded cheddar cheese until melted.
7. Season with salt and black pepper to taste.
8. Serve hot with crusty bread.
Notes:
For a smoother soup, blend the mixture before adding cheese.
