Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the ground beef and cook until browned, breaking it up with a wooden spoon.
Stir in the chopped tomatoes, kidney beans, chili powder, ground cumin, paprika, salt, and black pepper.
Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally.
Serve hot, garnished with your favorite toppings.
Notes:
Feel free to adjust the spices to your taste. Serve with rice, cornbread, or tortilla chips.
