Ingredients:  

Main Ingredients

  • 4 cups dandelion greens washed and chopped
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 0.25 cup feta cheese crumbled

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • to taste salt and pepper

Instructions: 

  • 1. In a large mixing bowl, combine the dandelion greens, cherry tomatoes, red onion, and feta cheese.
  • 2. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
  • 3. Pour the dressing over the salad and toss to combine.
  • 4. Serve immediately.

Notes:

For a more filling salad, add grilled chicken or avocado slices.
