Ingredients:  

Main Ingredients

  • 2 large cucumbers sliced thin
  • 1 cup red onion sliced thin
  • 1 cup carrots julienned
  • 1/4 cup cilantro chopped
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp salt
  • 1 tsp red pepper flakes

Instructions: 

  • In a large mixing bowl, combine the sliced cucumbers, red onion, carrots, and cilantro.
  • In a small bowl, whisk together the rice vinegar, sugar, lime juice, salt, and red pepper flakes until the sugar is dissolved.
  • Pour the dressing over the vegetables and toss to coat evenly.
  • Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

Notes:

For extra crunch, add some chopped peanuts or cashews on top before serving.
