Ingredients:  

Main Ingredients

  • 1 cup Orzo pasta
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions: 

  • 1. Cook the orzo according to package instructions. Drain and set aside to cool.
  • 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • 3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic, salt, and pepper.
  • 4. Add the cooked orzo to the vegetable mixture. Pour the dressing over the salad and toss to combine.
  • 5. Serve immediately or refrigerate for later. Enjoy!

Notes:

Feel free to add more veggies or adjust the seasoning to your taste.
