Ingredients:  

Main Ingredients

  • 6 medium potatoes peeled and diced
  • 3 large hard-boiled eggs chopped
  • 1 small onion finely chopped
  • 1 cup celery chopped
  • 1 cup mayonnaise
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste Paprika for garnish

Instructions: 

  • Boil potatoes until tender, about 20 minutes. Let cool, then peel and dice.
  • In a large bowl, combine diced potatoes, chopped eggs, onion, and celery.
  • In a separate bowl, mix mayonnaise, vinegar, sugar, mustard, salt, and pepper.
  • Pour dressing over potato mixture and stir to combine.
  • Chill in the refrigerator for at least 1 hour before serving.
  • Garnish with paprika before serving.

Notes:

Chill the salad for better flavor.
