Ingredients:  

Cake

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup butter, softened
  • 0.75 cup sugar
  • 1 large egg
  • 0.5 cup milk
  • 2 cups blueberries

Streusel Topping

  • 0.5 cup sugar
  • 0.5 cup all-purpose flour
  • 0.5 tsp cinnamon
  • 0.25 cup butter, softened

Instructions: 

  • Preheat oven to 375°F (190°C). Grease a 9-inch baking pan.
  • In a bowl, mix flour, baking powder, and salt.
  • In another bowl, cream butter and sugar until light and fluffy. Add egg and mix well.
  • Gradually add flour mixture to butter mixture, alternating with milk. Fold in blueberries.
  • Pour batter into prepared pan.
  • For streusel, combine sugar, flour, and cinnamon. Cut in butter until crumbly. Sprinkle over batter.
  • Bake for 45 minutes or until a toothpick inserted into the center comes out clean. Cool before serving.

Notes:

Best served warm with a scoop of vanilla ice cream.
