1. In a large mixing bowl, combine 1 cup of flour, yeast, and sugar. Add warm milk and melted butter. Stir until smooth.
2. Add the beaten egg, raisins, cinnamon, nutmeg, allspice, and salt. Mix well.
3. Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes.
4. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
5. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place on a greased baking sheet. Cover and let rise for another 30 minutes.
6. Preheat the oven to 375°F (190°C). Mix the flour and water for the cross. Pipe a cross on each bun.
7. Bake for 20-25 minutes or until golden brown. Brush with warmed apricot jam while still warm.
