Ingredients:  

Main Ingredients

  • 1 lb Chicken gizzards cleaned
  • 2 cups Buttermilk
  • 1 cup All-purpose flour
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 quart Vegetable oil for frying

Instructions: 

  • 1. Soak the cleaned chicken gizzards in buttermilk for at least 2 hours, preferably overnight.
  • 2. In a mixing bowl, combine the flour, salt, black pepper, garlic powder, and paprika.
  • 3. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • 4. Remove the gizzards from the buttermilk, allowing excess to drip off, and dredge them in the flour mixture until well-coated.
  • 5. Fry the gizzards in batches for about 5-7 minutes or until golden brown and crispy.
  • 6. Remove the gizzards from the oil and drain on paper towels. Serve hot.

Notes:

For extra flavor, you can add a pinch of cayenne pepper to the flour mixture.
