Instructions:
1. Heat the milk in a pot until it starts to simmer.
2. Add lemon juice and stir until the milk curdles.
3. Remove from heat and let it sit for 10 minutes.
4. Strain the mixture through a cheesecloth-lined strainer.
5. Gather the cheesecloth and squeeze out excess whey.
6. Add salt and mix well.
7. Shape the cheese and refrigerate for at least 1 hour before serving.
Notes:
Use fresh lemon juice for best results.
