Mexican Rice Recipe

Ingredients:  

Main Ingredients

  • 1 cup long-grain white rice
  • 2 tbsp vegetable oil
  • 1 clove garlic, minced
  • 1/4 cup onion, finely chopped
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 cup frozen peas and carrots

Instructions: 

  • Heat oil in a large skillet over medium heat.
  • Add rice and cook, stirring constantly, until golden brown.
  • Add garlic and onion, and cook until tender.
  • Stir in tomato sauce and chicken broth, and bring to a boil.
  • Add salt and cumin. Reduce heat to low, cover, and simmer for 20 minutes.
  • Stir in peas and carrots, cover, and cook for an additional 5 minutes.
  • Fluff with a fork and serve.

Notes:

For a spicier version, add a chopped jalapeño with the garlic and onion.
