tomato sauce

chicken broth

frozen peas and carrots
Instructions:
Heat oil in a large skillet over medium heat.
Add rice and cook, stirring constantly, until golden brown.
Add garlic and onion, and cook until tender.
Stir in tomato sauce and chicken broth, and bring to a boil.
Add salt and cumin. Reduce heat to low, cover, and simmer for 20 minutes.
Stir in peas and carrots, cover, and cook for an additional 5 minutes.
Fluff with a fork and serve.
Notes:
For a spicier version, add a chopped jalapeño with the garlic and onion.
