Instructions:
In a large mixing bowl, combine the shredded cabbage, shredded carrots, and sliced green onions.
In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
Pour the dressing over the slaw mixture and toss to coat evenly.
Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
Notes:
For extra crunch, add some toasted sesame seeds or chopped peanuts on top before serving.
