Ingredients:  

Main Ingredients

  • 4 large potatoes washed and cubed
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup green onions chopped
  • 1/2 cup bacon bits cooked
  • 1 cup cheddar cheese shredded
  • to taste salt
  • to taste black pepper

Instructions: 

  • Preheat your oven to 400°F (200°C).
  • Place cubed potatoes on a baking sheet and bake for 45 minutes or until golden brown and tender.
  • In a large mixing bowl, combine sour cream, mayonnaise, green onions, bacon bits, and cheddar cheese.
  • Add the baked potatoes to the mixture and stir until well combined.
  • Season with salt and black pepper to taste. Serve warm or chilled.

Notes:

This salad can be made a day ahead and stored in the refrigerator.
