Ingredients:  

Main Ingredients

  • 4 medium zucchini spiralized
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1/4 cup Parmesan cheese grated
  • to taste salt and pepper

Instructions: 

  • 1. Spiralize the zucchini into noodles.
  • 2. Heat olive oil in a large skillet over medium heat.
  • 3. Add minced garlic and cook until fragrant, about 1 minute.
  • 4. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  • 5. Add the zucchini noodles and cook for 2-3 minutes until tender but still crisp.
  • 6. Season with salt and pepper to taste.
  • 7. Serve immediately, topped with grated Parmesan cheese.

Notes:

For extra flavor, add a squeeze of lemon juice before serving.
