Ingredients:  

Main Ingredients

  • 1 lb smoked sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups bell peppers, chopped any color
  • 1 cup cherry tomatoes, halved
  • 1 tsp Italian seasoning
  • to taste salt and pepper

Instructions: 

  • Heat a large skillet over medium heat.
  • Add the sliced smoked sausage and cook until browned, about 5 minutes.
  • Add the chopped onion and cook until softened, about 3 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the chopped bell peppers and cook until tender, about 5 minutes.
  • Stir in the cherry tomatoes and Italian seasoning. Cook for another 2-3 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like zucchini or mushrooms.
