Ingredients:

  • 1 cup cake flour sifted
  • 1.5 cups granulated sugar divided
  • 12 egg whites room temperature
  • 1.5 tsp cream of tartar
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, sift together the cake flour and 3/4 cup of the sugar. Set aside.
  • In a large mixing bowl, beat the egg whites, cream of tartar, and salt on medium speed until foamy.
  • Gradually add the remaining 3/4 cup of sugar, 1 tablespoon at a time, beating on high speed until stiff peaks form.
  • Gently fold in the vanilla extract.
  • Sift the flour mixture over the egg whites in small batches, gently folding after each addition until just incorporated.
  • Spoon the batter into an ungreased 10-inch tube pan. Gently cut through the batter with a knife to remove air pockets.
  • Bake for 40-45 minutes, or until the cake springs back when lightly touched.
  • Invert the pan and let the cake cool completely before removing from the pan.

Notes:

Make sure to use an ungreased pan to help the cake rise properly.
