Bolillo rolls (or French bread)
sliced in half lengthwise

Refried beans

Shredded cheese
like Oaxaca or Monterey Jack

Pico de gallo
Instructions:
Preheat your oven to 350°F (175°C).
Spread a layer of refried beans on each half of the bolillo rolls.
Top the beans with shredded cheese.
Place the rolls on a baking sheet and bake in the oven for about 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top with pico de gallo. Serve immediately.
Notes:
For a spicier version, add some sliced jalapeños on top of the cheese before baking.
