Traditional Mexican Molletes Recipe

Ingredients:  

Main Ingredients

  • 4 Bolillo rolls (or French bread) sliced in half lengthwise
  • 1 cup Refried beans
  • 1 cup Shredded cheese like Oaxaca or Monterey Jack
  • 1 cup Pico de gallo

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Spread a layer of refried beans on each half of the bolillo rolls.
  • Top the beans with shredded cheese.
  • Place the rolls on a baking sheet and bake in the oven for about 10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with pico de gallo. Serve immediately.

Notes:

For a spicier version, add some sliced jalapeños on top of the cheese before baking.
