Ingredients:  

Main Ingredients

  • 1 cup mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs beaten
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions: 

  • Preheat your oven to 350°F (175°C). Grease a loaf pan.
  • In a mixing bowl, combine mashed sweet potatoes, sugar, and oil. Mix well.
  • Add beaten eggs to the mixture and blend thoroughly.
  • In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
  • Pour the batter into the prepared loaf pan.
  • Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
