1. Grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
2. In a large mixing bowl, combine the grated potatoes and onion with the eggs, flour, salt, and pepper. Mix well.
3. Heat the vegetable oil in a frying pan over medium-high heat.
4. Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with a spatula. Fry until golden brown and crispy, about 3-4 minutes per side.
5. Remove the latkes from the pan and drain on paper towels. Serve hot.
