Ingredients:  

Main Ingredients

  • 2 medium zucchini grated
  • 1 tsp salt
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions: 

  • 1. Grate the zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes. Squeeze out excess moisture.
  • 2. In a mixing bowl, combine the zucchini, flour, egg, Parmesan cheese, parsley, and black pepper.
  • 3. Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the pan and flatten slightly. Cook until golden brown, about 3-4 minutes per side.
  • 4. Remove fritters from the pan and drain on paper towels. Serve warm.

Notes:

These fritters are great with a dollop of sour cream or a squeeze of lemon juice.
