1. Grate the zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes. Squeeze out excess moisture.
2. In a mixing bowl, combine the zucchini, flour, egg, Parmesan cheese, parsley, and black pepper.
3. Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the pan and flatten slightly. Cook until golden brown, about 3-4 minutes per side.
4. Remove fritters from the pan and drain on paper towels. Serve warm.
