Ingredients:  

Main Ingredients

  • 2 cups Leftover chicken, shredded
  • 1 cup Mashed potatoes
  • 1/2 cup Breadcrumbs plus extra for coating
  • 1 Egg beaten
  • 1/4 cup Chopped parsley
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil for frying

Instructions: 

  • In a mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, parsley, salt, and pepper.
  • Form the mixture into small patties and coat them with extra breadcrumbs.
  • Heat olive oil in a frying pan over medium heat.
  • Fry the croquettes until golden brown, about 3-4 minutes per side.
  • Drain on paper towels and serve hot.

Notes:

Great with a side of salad or dipping sauce.
