Instructions:
In a mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, parsley, salt, and pepper.
Form the mixture into small patties and coat them with extra breadcrumbs.
Heat olive oil in a frying pan over medium heat.
Fry the croquettes until golden brown, about 3-4 minutes per side.
Drain on paper towels and serve hot.
