Ingredients:  

Main Ingredients

  • 1 can Black-eyed peas drained and rinsed
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Cherry tomatoes halved
  • 1 cup Bell pepper diced
  • 1/2 cup Red onion diced
  • 1/4 cup Cilantro chopped
  • 1/4 cup Olive oil
  • 1/4 cup Red wine vinegar
  • 1 tsp Garlic powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • In a large mixing bowl, combine the black-eyed peas, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, salt, and black pepper.
  • Pour the dressing over the bean mixture and toss to coat evenly.
  • Refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes:

Serve with tortilla chips or as a side dish. Adjust seasoning to taste.
