Instructions:
In a large mixing bowl, combine the black-eyed peas, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, salt, and black pepper.
Pour the dressing over the bean mixture and toss to coat evenly.
Refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes:
Serve with tortilla chips or as a side dish. Adjust seasoning to taste.
