Ingredients:  

Main Ingredients

  • 1 cup corn kernels fresh or canned
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil for frying

Instructions: 

  • In a mixing bowl, combine the flour, baking powder, salt, and pepper.
  • Add the egg and milk, and mix until smooth.
  • Fold in the corn kernels.
  • Heat the oil in a frying pan over medium heat.
  • Spoon the batter into the pan, forming small fritters. Cook until golden brown on both sides, about 2-3 minutes per side.
  • Drain on paper towels and serve warm.

Notes:

These fritters are great with a dollop of sour cream or a sprinkle of chopped herbs.
