Ingredients:  

Main Ingredients

  • 2 lbs chicken wings cut into sections
  • 1 large onion sliced
  • 2 large potatoes peeled and diced
  • 2 large carrots peeled and sliced
  • 1 lime juiced
  • 0.5 cup allspice berries
  • 2 cloves garlic minced
  • 1 Scotch bonnet pepper chopped (optional)
  • 6 cups water
  • Salt and pepper to taste

Instructions: 

  • In a large pot, add chicken, water, and allspice berries. Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Add onions, potatoes, carrots, garlic, and Scotch bonnet pepper. Simmer for another 20 minutes.
  • Add lime juice, salt, and pepper. Simmer for an additional 5 minutes.
  • Serve hot.

Notes:

This dish is best served hot and can be enjoyed with a side of Johnny cake or bread.
