dry white wine

dried thyme

grated Gruyere cheese
Instructions:
1. Melt butter in a large skillet over medium heat. Add onions and cook until caramelized, about 20 minutes.
2. Add garlic and brown sugar, cook for another minute.
3. Pour in white wine to deglaze the pan, scraping up any browned bits.
4. Transfer the onion mixture to the slow cooker. Add beef broth, thyme, bay leaf, salt, and pepper.
5. Cover and cook on low for 7-8 hours.
6. Before serving, remove bay leaf. Ladle soup into bowls, top with toasted baguette slices and grated Gruyere cheese.
7. Broil until cheese is melted and bubbly. Serve hot.
Notes:
For a richer flavor, use a combination of beef and chicken broth.
