Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onions and celery, and cook until softened.
3. Stir in the carrots, potatoes, beef broth, canned tomatoes, salt, pepper, thyme, and basil.
4. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the vegetables are tender.
5. Adjust seasoning to taste and serve hot.
Notes:
This soup is even better the next day!
