Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat
  • 2 cups Carrots, chopped
  • 2 cups Potatoes, diced
  • 1 cup Onion, chopped
  • 1 cup Celery, chopped
  • 4 cups Beef Broth
  • 2 cups Canned Tomatoes, with juice
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Thyme
  • 1 tsp Dried Basil

Instructions: 

  • 1. In a large pot, brown the beef stew meat over medium heat.
  • 2. Add the chopped onions and celery, and cook until softened.
  • 3. Stir in the carrots, potatoes, beef broth, canned tomatoes, salt, pepper, thyme, and basil.
  • 4. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the vegetables are tender.
  • 5. Adjust seasoning to taste and serve hot.

Notes:

This soup is even better the next day!
