Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cans Cannellini Beans, drained and rinsed
  • 1 can Diced Tomatoes
  • 4 cups Chicken Broth
  • 1 cup Ditalini Pasta
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt and Pepper
  • 1/4 cup Grated Parmesan Cheese for serving
  • 1/4 cup Chopped Fresh Parsley for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add cannellini beans, diced tomatoes, and chicken broth. Bring to a boil.
  • Add ditalini pasta, dried oregano, and dried basil. Reduce heat and simmer until pasta is tender, about 10-12 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.

Notes:

This is a comforting and filling soup, perfect for a chilly day.
