Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 cup Long Grain Rice
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Tomato Sauce
  • 2 cups Chicken Broth
  • 1 tsp Salt
  • 1 tsp Ground Cumin
  • 1 cup Frozen Peas

Instructions: 

  • Heat olive oil in a large skillet over medium heat.
  • Add rice and cook, stirring constantly, until golden brown.
  • Add onion and garlic, and cook until softened.
  • Stir in tomato sauce, chicken broth, salt, and cumin. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes.
  • Stir in frozen peas and cook for an additional 5 minutes.
  • Fluff with a fork and serve.

Notes:

For a spicier version, add a chopped jalapeño with the onion and garlic.
