Ingredients:  

Main Ingredients

  • 1 cup dried red beans soaked overnight
  • 1 cup white rice
  • 1 medium onion chopped
  • 1 medium green bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 cups water

Instructions: 

  • 1. Rinse and drain the soaked beans.
  • 2. In a large pot, sauté the onion, bell pepper, and garlic until soft.
  • 3. Add the beans, water, thyme, paprika, salt, and pepper. Bring to a boil.
  • 4. Reduce heat and simmer for 45 minutes, or until beans are tender.
  • 5. Cook the rice according to package instructions.
  • 6. Serve the beans over the rice.

Notes:

Feel free to add sausage or ham for extra flavor.
