Instructions:
1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
2. In a large mixing bowl, combine the potatoes, red onion, cucumber, olives, and feta cheese.
3. In a small bowl, whisk together the olive oil, red wine vinegar, and oregano. Pour over the potato mixture and toss to coat.
4. Season with salt and pepper to taste. Serve chilled or at room temperature.
Notes:
This salad is best when allowed to sit for a few hours to let the flavors meld.
