Instructions:
1. Preheat grill pan over medium-high heat.
2. Season salmon fillets with salt and pepper.
3. Grill salmon for about 4-5 minutes on each side, until cooked through.
4. In a mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
5. In a small bowl, whisk together olive oil and lemon juice. Season with salt and pepper.
6. Drizzle dressing over salad and toss to combine.
7. Top salad with grilled salmon fillets and serve immediately.
Notes:
Feel free to add other veggies or nuts for extra crunch.
