Ingredients:  

Salad Ingredients

  • 2 fillets Salmon skinless
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Cucumber sliced
  • 1/4 cup Red Onion thinly sliced
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice freshly squeezed
  • to taste Salt and Pepper

Instructions: 

  • 1. Preheat grill pan over medium-high heat.
  • 2. Season salmon fillets with salt and pepper.
  • 3. Grill salmon for about 4-5 minutes on each side, until cooked through.
  • 4. In a mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  • 5. In a small bowl, whisk together olive oil and lemon juice. Season with salt and pepper.
  • 6. Drizzle dressing over salad and toss to combine.
  • 7. Top salad with grilled salmon fillets and serve immediately.

Notes:

Feel free to add other veggies or nuts for extra crunch.
