Ingredients:  

Main Ingredients

  • 2 cups Sauerkraut
  • 1 cup Shredded Carrots
  • 1 cup Chopped Green Bell Pepper
  • 1/4 cup Chopped Fresh Dill
  • 2 tablespoons Olive Oil
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Honey
  • to taste Salt and Pepper

Instructions: 

  • In a large mixing bowl, combine the sauerkraut, shredded carrots, and chopped green bell pepper.
  • Add the chopped fresh dill, olive oil, apple cider vinegar, and honey to the bowl.
  • Toss everything together until well mixed. Season with salt and pepper to taste.
  • Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

Notes:

This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
