Instructions:
Peel the lemons, avoiding the white pith.
Place the lemon peels in a large jar and pour the vodka over them. Seal the jar and let it sit for 1 week.
After 1 week, make a simple syrup by heating the sugar and water until the sugar dissolves. Let it cool.
Strain the lemon peels from the vodka and mix the vodka with the cooled simple syrup.
Bottle the limoncello and store it in the freezer. Serve chilled.
Notes:
For a stronger lemon flavor, let the peels steep for up to a month.
