Ingredients:  

Main Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 1 cup Tomatoes diced
  • 1 cup Red Onion diced
  • 1/2 cup Cilantro chopped
  • 1 unit Jalapeño seeded and minced
  • 1 unit Lime juiced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • In a large mixing bowl, combine black beans, corn, tomatoes, red onion, cilantro, and jalapeño.
  • Pour lime juice over the mixture and add salt and black pepper. Stir well to combine.
  • Cover and refrigerate for at least 30 minutes to let the flavors meld together.
  • Serve chilled with tortilla chips or as a topping for tacos.

Notes:

Adjust the amount of jalapeño to your spice preference.
