Ingredients:  

Main Ingredients

  • 2 cups Chicken breast, cooked and shredded
  • 4 cups Chicken broth
  • 1 cup Carrots, sliced
  • 1 cup Celery, sliced
  • 1 cup Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 1 tbsp Soy sauce
  • 1 tsp Ginger, grated
  • to taste Salt and pepper
  • 2 cups Spinach leaves

Instructions: 

  • 1. In a large pot, heat a bit of oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  • 2. Add carrots, celery, and mushrooms. Cook for 5 minutes until slightly tender.
  • 3. Pour in chicken broth and bring to a boil.
  • 4. Add shredded chicken, soy sauce, salt, and pepper. Reduce heat and simmer for 15 minutes.
  • 5. Stir in spinach leaves and cook for another 2 minutes until wilted.
  • 6. Serve hot.

Notes:

Feel free to add other vegetables like bell peppers or bok choy.
