ham hock

Instructions:
1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
2. Add garlic and cook for another minute.
3. Add the yellow split peas, ham hock, chicken broth, thyme, and black pepper. Bring to a boil.
4. Reduce heat to low, cover, and simmer for about 2 hours, or until peas are tender.
5. Remove ham hock, shred the meat, and return it to the pot. Discard the bone.
6. Adjust seasoning with salt and pepper if needed. Serve hot.
Notes:
This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
