Ingredients:  

Main Ingredients

  • 2 cups yellow split peas rinsed and drained
  • 1 large onion chopped
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 1 lb ham hock
  • 8 cups chicken broth low sodium
  • 1 tsp dried thyme
  • 1 tsp black pepper freshly ground
  • 2 tbsp olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  • 2. Add garlic and cook for another minute.
  • 3. Add the yellow split peas, ham hock, chicken broth, thyme, and black pepper. Bring to a boil.
  • 4. Reduce heat to low, cover, and simmer for about 2 hours, or until peas are tender.
  • 5. Remove ham hock, shred the meat, and return it to the pot. Discard the bone.
  • 6. Adjust seasoning with salt and pepper if needed. Serve hot.

Notes:

This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
