Instructions:
Melt butter in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Stir in crabmeat, heavy cream, salt, black pepper, and paprika. Simmer for another 10 minutes.
Use a blender to puree the soup until smooth. Return to the pot and heat through before serving.
Notes:
For a richer flavor, you can add a splash of sherry before serving.
