Ingredients:  

Main Ingredients

  • 1 kg Chicken cut into serving pieces
  • 1 medium Green Papaya peeled and sliced
  • 2 cups Chili Leaves
  • 1 thumb-sized Ginger julienned
  • 1 medium Onion chopped
  • 4 cloves Garlic minced
  • 5 cups Water
  • 1 tbsp Fish Sauce
  • to taste Salt
  • to taste Pepper

Instructions: 

  • 1. In a pot, heat some oil and sauté the garlic, onion, and ginger until fragrant.
  • 2. Add the chicken pieces and cook until they turn white.
  • 3. Pour in the water and bring to a boil. Lower the heat and simmer for about 30 minutes or until the chicken is tender.
  • 4. Add the green papaya and cook for another 5-7 minutes until the papaya is tender.
  • 5. Stir in the fish sauce, salt, and pepper to taste.
  • 6. Add the chili leaves and cook for another 2 minutes.
  • 7. Serve hot with rice.

Notes:

For a spicier version, you can add some chili peppers.
