Ingredients:  

Main Ingredients

  • 2 tbsp Butter
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken broth
  • 2 cups Corn kernels, fresh or frozen
  • 2 cups Cooked chicken, shredded
  • 1 cup Heavy cream
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Chopped fresh parsley for garnish

Instructions: 

  • Melt the butter in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Pour in the chicken broth and bring to a boil. Add the corn kernels and shredded chicken. Reduce heat and simmer for 15 minutes.
  • Stir in the heavy cream, salt, and black pepper. Cook for another 5 minutes until heated through.
  • Garnish with chopped fresh parsley before serving.

Notes:

This chowder is great served with crusty bread.
