Ingredients:  

Main Ingredients

  • 2 pounds Yukon Gold potatoes peeled and sliced
  • 6 slices bacon diced
  • 1 cup onion chopped
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 3 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions: 

  • 1. Boil potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
  • 2. In a skillet, cook bacon until crispy. Remove bacon and set aside, leaving drippings in the skillet.
  • 3. Add onions to the skillet and cook until tender.
  • 4. Stir in vinegar, water, sugar, mustard, salt, and pepper. Bring to a boil.
  • 5. Pour the hot dressing over the potatoes. Add bacon and parsley. Toss gently to coat.
  • 6. Serve warm or at room temperature.

Notes:

For best results, use Yukon Gold potatoes as they hold their shape well.
