Instructions:
1. Boil potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
2. In a skillet, cook bacon until crispy. Remove bacon and set aside, leaving drippings in the skillet.
3. Add onions to the skillet and cook until tender.
4. Stir in vinegar, water, sugar, mustard, salt, and pepper. Bring to a boil.
5. Pour the hot dressing over the potatoes. Add bacon and parsley. Toss gently to coat.
6. Serve warm or at room temperature.
Notes:
For best results, use Yukon Gold potatoes as they hold their shape well.
