Ingredients:  

Main Ingredients

  • 1 kg Potatoes peeled and cubed
  • 1/2 cup Red Onion finely chopped
  • 1/4 cup Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Fresh Basil chopped
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  • 2. In a mixing bowl, combine the olive oil, red wine vinegar, salt, and black pepper.
  • 3. Add the cooled potatoes, red onion, cherry tomatoes, and fresh basil to the bowl. Toss gently to combine.
  • 4. Adjust seasoning with more salt and pepper if needed. Serve at room temperature or chilled.

Notes:

This salad can be made a day ahead and stored in the refrigerator. Just give it a good toss before serving.
