Instructions:
1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
2. In a mixing bowl, combine the olive oil, red wine vinegar, salt, and black pepper.
3. Add the cooled potatoes, red onion, cherry tomatoes, and fresh basil to the bowl. Toss gently to combine.
4. Adjust seasoning with more salt and pepper if needed. Serve at room temperature or chilled.
Notes:
This salad can be made a day ahead and stored in the refrigerator. Just give it a good toss before serving.
