Ingredients:  

Main Ingredients

  • 1 lb asparagus trimmed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon juiced
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup toasted pine nuts
  • Mixed greens for serving

Instructions: 

  • Preheat grill to medium-high heat.
  • Toss asparagus with olive oil, salt, and pepper.
  • Grill asparagus for 5-7 minutes, turning occasionally, until tender and slightly charred.
  • Remove from grill and let cool slightly.
  • In a large bowl, combine grilled asparagus, lemon juice, Parmesan cheese, and pine nuts.
  • Serve over mixed greens.

Notes:

For extra flavor, add a drizzle of balsamic glaze.
