Ingredients:

mayonnaise

Dijon mustard

apple cider vinegar

Instructions:
1. Preheat oven to 400°F (200°C).
2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
3. Roast for 20 minutes or until tender. Let cool.
4. In a large bowl, mix mayonnaise, Dijon mustard, and apple cider vinegar.
5. Add roasted sweet potatoes, celery, red onion, and parsley. Toss to combine.
6. Chill in the refrigerator for at least 1 hour before serving.
