Ingredients:  

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 stalks celery chopped
  • 1 small red onion diced
  • 2 tbsp fresh parsley chopped

Instructions: 

  • 1. Preheat oven to 400°F (200°C).
  • 2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  • 3. Roast for 20 minutes or until tender. Let cool.
  • 4. In a large bowl, mix mayonnaise, Dijon mustard, and apple cider vinegar.
  • 5. Add roasted sweet potatoes, celery, red onion, and parsley. Toss to combine.
  • 6. Chill in the refrigerator for at least 1 hour before serving.

Great for picnics and barbecues!
