Ingredients:  

Main Ingredients

  • 2 cups elbow macaroni uncooked
  • 3 large eggs hard-boiled and chopped
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 1 cup red bell pepper chopped
  • 2 cups mayonnaise
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 2 tbsp yellow mustard
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Cook macaroni according to package instructions. Drain and rinse with cold water.
  • In a large bowl, whisk together mayonnaise, vinegar, sugar, mustard, salt, and pepper.
  • Add macaroni, eggs, celery, onion, and red bell pepper to the bowl. Mix well to coat.
  • Cover and refrigerate for at least 1 hour before serving.

Notes:

For best results, let the salad sit overnight to allow the flavors to meld.
