Ingredients:  

Main Ingredients

  • 1 Large eggplant sliced into rounds
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 4 Sandwich buns split and toasted
  • 4 slices Tomato
  • 4 leaves Lettuce
  • 4 slices Cheese optional

Instructions: 

  • 1. Preheat grill pan over medium heat.
  • 2. Brush eggplant slices with olive oil and season with salt and pepper.
  • 3. Grill eggplant slices for 3-4 minutes on each side until tender and grill marks appear.
  • 4. Assemble sandwiches with grilled eggplant, tomato slices, lettuce, and cheese if using.
  • 5. Serve immediately and enjoy!
