1cupmixed vegetables (carrots, bell peppers, etc.), julienned
2tbspgreen onions, chopped
Instructions:
1. Soak the vermicelli rice noodles in warm water for about 10 minutes or until they are soft. Drain and set aside.
2. Heat the vegetable oil in a wok over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
3. Add the mixed vegetables to the wok and stir-fry for 3-4 minutes until they are tender-crisp.
4. Add the soaked and drained vermicelli rice noodles to the wok. Pour in the soy sauce and oyster sauce. Toss everything together until the noodles are evenly coated with the sauce.
5. Stir in the chopped green onions and cook for another 1-2 minutes. Serve hot.
Notes:
Feel free to add your favorite protein like chicken, shrimp, or tofu.
