Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, beat the egg whites until soft peaks form. Gradually add half of the sugar and continue to beat until stiff peaks form.
In another bowl, beat the egg yolks with the remaining sugar and vanilla extract until thick and pale. Gently fold in the egg whites.
Sift the flour and salt over the egg mixture and fold gently to combine.
Transfer the batter to a piping bag fitted with a plain round tip. Pipe 3-inch long strips onto the prepared baking sheet, spacing them about 1 inch apart.
Dust the tops with powdered sugar and bake for 12-15 minutes, or until lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
