Ingredients:  

Main Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions: 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the blueberries.
  • Turn the dough out onto a floured surface and shape it into a circle about 1-inch thick. Cut into 8 wedges.
  • Place the wedges on the prepared baking sheet and bake for 20 minutes, or until golden brown.
  • Let cool on a wire rack before serving.
